Bollinger Special Cuvée Champagne Brut NV

Bollinger, like two of our other perennial favorites Krug and Vilmart, ferments all of their base vin clairs in neutral oak barrels. This means that each of these wines is imbued with a wondrously rich texture on the finish, while staying brilliantly brisk. This is always one of our favorite bottles.

Piot-Sévillano Millesime 2012 Extra Brut NV

WOW this wine continues to blow people's minds. It's fantastically complex, toasty and rich, and brings the heat for real. We bought as much as we possibly could–it's a very complete, mature wine that we're quite fond of, and we think you will be too.

Jose Michel Special Club Extra Brut 2014

We love Special Club (Club Trésors) Champagnes, and this one is a great example. It's all about minerals here. José Michel's wines always have stony, earthy qualities in spades, but also a clean fruit quality that transcends through nose and palate.
