Domaine Hauvette Jaspe Blanc 2013

This Domaine Hauvette Jaspe is made from 100% Roussanne, that perpetual champion of southern French white. Roussanne has a way of retaining lift and balance even as a fuller-bodied white grape. Chardonnay grown in the same warm conditions can feel flabby and unfocused–Roussanne always feels precise. 

A gentle, fresh nose of golden apple, lemon thyme and honeysuckle is what you notice first. On the palate this lives primarily at the front, with cascading textures of beeswax, cider apple and rosemary oil. Its texture is velvety and finishes with a slight, pleasant bitterness: that characteristic so prized in warm-climate whites.
