Sabine Godme Terre de Verzenay Extra Brut NV

Only 600 bottles of Sabine Godmé's Terre de Verzenay bottling are released each year. We have 6 of them :) This is a geeky, bright, textured grower Champagne from a tiny house that's making awesome wine.
This is a blend of old-vines Pinot Noir and Chardonnay grown on bare chalk soil, bottled at a searingly bright 3 g/l of residual sugar (hence the Extra Brut designation). This ages for 3 years on the lees, and includes a fair amount of base wine from 2015.
