Txakolina is one of those silly, lesser-known corners of the wine world, but if you've ever been to San Sebastian you've probably had it–poured at a great height over a crowded bar right before you snacked on some mussels, prawns and olives. In both its white and rosé forms, Txakolina is a brilliantly tart, spritzy wine with an immense food-flexibility, and pleasantly low alcohol. This one's clocking in at 10.5%, while many big reds are pushing 15%, so as you can guess it's easy to make this one disappear while prepping dinner.

The main grape is Hondarribi Beltza, a cousin of Cabernet Franc, which means there's a strong green component. In other words, herbs, vegetables and flowers. A wonderful bouquet of rhubarb, orange bell pepper, and strawberry leaf jumps out of the glass, accompanied by scents of fresh rain and marigold. But this is not a wine to be overthought. It's meant to be drank, heartily and gleefully. Let it excite your palate with that tongue-twisting acidity, and that hint of ocean-spray saltiness.

This is the first of many rosé offers this year, but we promise you're going to want to hop on this one. This wine typically runs out from the distributor in early to mid summer, and we were too late to hop on it last year.

This is your "I need a damn rosé right now" bottle. It's your "what do I pair with the third summer salad I've made this week?" bottle. It's your "wow it's hot outside and I don't feel like beer" bottle. It's your "I need something to put in a thermos and take to the lake/river/ocean" bottle. So. Drink heartily, enjoy the heck out of it, get as much as you think you can handle. Now's the time to hop on it!
